PUMPKIN ROLL
3/4 Cup Pioneer Buttermilk baking mix
3 eggs
1 Cup Sugar
2/3 Cup pumpkin, packed
1/2 Cup chopped nuts (optional)
2 tsp. cinnamon
1/2 tsp. nutmeg
FILLING
8 oz cream cheese
1 Cup powdered sugar
1 tsp. Vanilla
1/2 stick butter
Mix eggs and sugar. Beat till fluffy. Add the rest of the ingredients and beat until smooth.
Put wax paper on bottom of jelly roll pan and spray with PAM. Pour batter onto cookie sheet and bake 15 to 20 minutes. Turn over on towel dusted with powdered sugar and chopped nuts. Roll into towel and let cool in refrigerator. When chilled, unroll and fill.
Filling
Mix all ingredients till smooth.
Spread onto plain side of pumpkin roll and re-roll, with out the towel. Wrap in wax paper and foil and chill.
Slice and serve.
