Sweet Potatoes

I don't like peeling potatoes.

Cook them in the microwave just like a baked potato.

(put a plate under them in case they leak) 

Make sure they give well to the touch

Let them cool 30 minutes

Slice them in half

SCOOOP out the flesh

Put them in a casserole dish.

Decorate them any way you want.

Butter? Marshmallows? Maple syrup? Bacon?

Bake for 20 minutes at 350.

I usually just dash the top with a little butter and nutmeg myself

(Throw that peel in the compost heap.)

Sweet potatoes with melted marshmallows on top. Can't wait til  Thanksgiving.

Have to pass on this one.  Don't care for sweet potatoes.  Now stuffing is another matter.

Everyone but my son loves sweet potatoes in my little family   Butter and nutmeg sound good to me!

And my son will get his regular mashed potatoes!

Or even better: we cube the potatoes and boil them in water with a pinch of salt; separately sautee green onions and parsley, salt and pepper in a little olive oil; when the potatoes are done, mix them with the onions/parsley.  New, pink potatoes skin on work best in this recipe.

I hate the peeling part.

If I don't do it over the sink, peelings are everywhere and I don't like standing at the sink peeling and rinsing.

Besides, there's always a water shortage out here.

You can take them to the ocean to wash and salt at the same time, lucky you

I normally go with the Brown sugar and maple syrup but will give the nutmeg and butter a try

You can eat the skins thats were most of the fiber and vatimins are same as regular potatoe skins
