Just wanted everyone to know what barbecue really is. What it is not is steaks, burgers, hot dogs or chicken thrown on a grill over a hot flame. But if you add barbecue sauce...that doesn't make it barbecue either & It can't be made in an oven.
Real barbecue only comes from low temperatures over a direct flame or by indirect heating for long periods of time. Low & slow. We take tough cuts of meat & slowly break it down until it almost falls off the bone. You can't do this with the lean cuts. A real piece of barbecue meat must have lots of fat to render & help break down the connective tissues in the meat. A real piece of barbecue meat is just fine without any sauce.
