Bean Soup

I am good friends with an elderly man who worked as a Chef in the NYC area for many years, He told me a funny story(though it was serious to him) the other day about how he would make bean soup as part of the lunch menu in a resturant he was working in.
He said the waitressess had certain customers who tipped well, that they would dip deep in the bean pot, and pour off the liquid, so as to add more beans, and get a better tip. The only problem was, they were running out of beans and serving only broth before lunch ended.
He solved the problem by seperating the beans from the broth, and only allowing the waitresses to use two tablespoons of beans per bowl!
And that is a download from the mind of a chef.
