Salmon Smothered in Onions

This recipe can be adapted to the number of people you want to feed but here are the basics. This goes out to David V who says he only eats fish.

3-4 salmon fillets about 5oz each - I like the skin off
2 tbsp butter/margarine
4 medium onions, thinly sliced (this is the best part so I over do the onions)
4garlic cloves, minced
1/2c chicken broth
1tbsp lemon juice
2tbsp minced parsley

In a large skillet melt the butter and add the onions and garlic. Saute until tender. Add the chicken broth, lemon juice and parsley. Bring to a boil and cook until most of the liquid is evaporated. Spray a large piece of aluminum foil. Place over a hot grill. Place salmon, skin side down, on top of greased foil. Season with salt and pepper to taste. Smother each fillet with your onions. Cover and grill until fillet flakes easily with a fork, about 15-18 minutes. The flavored onions are to die for. We all fight over them. This can be done in a 350 oven, but I think it tastes better on the grill.
