GREAT SUPPER FOR 4 - 6 PEOPLE

You will need 1 and half lb of white fish - 4 oz peeled prawns 3 hard boiled eggs 4 oz butter 2 oz plain flour 2lb freshly boiiled potatoes ,a mug of frozen peas 1 pt milk - nutmeg salt and pepper parsley to season and 1 oz strong cheese

Boil the potatoes and hard boil the eggs in advance and meanwhile heat the oven to gas mark 6 400F 200C - put the white fish in a large oven proof baking dish and cover with half pint of milk and dot with butter and peper and salt - bake for about 20 minutes - remove from heat and drain off and KEEP fishy milk - remove any skin from fish and flake the flesh into large pieces add the prawns and chopped hard boiled eggs to the dish - next melt butter in saucepan add a little flour and with the cooking milky liquid make a thick white sauce adding extra milk as required to make a nice smooth sauce. Pour this over fish/prawns and eggs add parsley nutmeg and pepper and salt to season.

Add some frozen peas into a mug just almost to the top and pour boiling water from a kettle over them rest for about a minute and the drain and sprinkle into the fish and mix all indgredients well.

Now mash potatoes with some milk and butter and cover the fish dish - grate the cheddar cheese on top of this and bake in the oven for 30 - 40 mins when heated through and the cheese browned nicely - serve with a salad and some nice crisp bread and of course white wine!
