Polish Potato Soup
- 1 lb Uncured Kielbasa cubed (can substitute Turkey Kielbasa for healthy alternative)
- 1/2 c chopped onion
- 4 beef bouillon cubes
- 1/2 tsp thyme
- 1/2 tsp terragon
- 8 cups water
- 1 16oz can tomatoes
- 2 cups chopped celery (about 4 stalks)
- 2 cups thinly sliced carrots, chopped
- 2 tbsp cider vinegar
- 1/2 tsp dill weed
- 1 bay leaf
- 3 cups cubed red potatoes with skin
- Grated Wisconsin cheddar cheese
Saute Kielbasa, celery and onion. Add carrots, water, vinegar, thyme, dill weed, teragon, bay lief and bouillon cubes. Simmer 1 1/2 hr. Add Potatoes and tomatoes. Cover and cook 30 more mins. Remove bay leaf. Serve with cheddar cheese. Or leave bay leaf in and whomever gets it gets to do the dishes
