Torta de Calabazas or what to do with Zucchinis

This is a zucchini recipe for any interested.  It's rather labor intensive, but mighty tasty.

TORTA DE CALABANZAS


2 lbs Zucchinni
1 Cup minced Onion
1/4 cup (or more) chopped green pepper
1 clove minced garlic
3 TBSP Olive Oil
3 Peeled chopped tomatoes (or 2 tom.+ 1 can tom. sauce)
2 TBSP minced parsley
1/2 Cup grated parmesan cheese
1 TBSP Salt, 1/4 Teasp.  pepper and oregano to taste
2 Eggs separated

2 TBSP butter
2 TBSP bread crumbs (or a whole lot more)

Cook zucchini until tender (in a little water to barely cover it, 12-15 min., or steam it just until you can stick a fork in it.) Fry onion, garlic & green pepper in oil; add tomatoes & 1 TBSP parsley. Season. Mix, zucchini, tomato, onion, etc. Beat egg whites stiff, but not dry. Beat egg yolks then add to whites, beating well. Butter casserole dish and sprinkle at bottom 1 TBSP bread crumbs (or more). Then pour in a layer of egg batter, then one of zucchini etc. until all ingredients are used. Top with remaining breadcrumbs, dot with butter, sprinkle with remaining parsley and bake 350-375 degrees for about 30 minutes until top is brown. Serves 4-6

Oh, YUM - I actually COOKED today (you might want to note the date on your calendar!).  It has been a looong time. I made Eggplant Parmesan.  Not so sure why they call it that because you use a LOT more mozzarella than parm - but am looking forward to it. I may need to try yours next!

That sounds delish!  I may try a modified version (with fewer WW points and fewer servings) tomorrow.  I did see at the farm stand where I shop, jars of sweet zucchini relish.  I may google that for recipe ideas.  33
