Polish Potato Soup

Today I am preparing the recipe Mark‌' shared.  If I remember correctly it is grandfather's recipe.  I am using the Turkey Kielbasa and substituting the potatoes with cauliflower also a reduced fat cheddar cheese. Thank you, Mark.

Polish Potato Soup

  • 1 lb Uncured Kielbasa cubed (can substitute Turkey Kielbasa for a healthy alternative)
  • 1/2 c chopped onion
  • 4 beef bouillon cubes
  • 1/2 tsp thyme
  • 1/2 tsp tarragon
  • 8 cups water
  • 1 16oz can tomatoes
  • 2 cups chopped celery (about 4 stalks)
  • 2 cups thinly sliced carrots, chopped
  • 2 tbsp cider vinegar
  • 1/2 tsp dill weed
  • 1 bay leaf
  • 3 cups cubed red potatoes with skin
  • Grated Wisconsin cheddar cheese

 

Saute Kielbasa, celery, and onion. Add carrots, water, vinegar, thyme, dill weed, tarragon, bay leaf and bouillon cubes. Simmer 1 1/2 hr. Add Potatoes and tomatoes. Cover and cook 30 more mins. Remove bay leaf. Serve with cheddar cheese. Or leave bay leaf in and whoever gets it gets to do the dishes

That is true.  It was my Grandfather Mark's recipe.  Not a III or a Jr. It's great for leftovers.
