Stuffed Flank Steak>I haven't made it in 40+ years

Stuffed flank steak was on my mind.

It's a tough cut of meat but when it's done, it's hard to beat.

      I was at a yuppie, grass fed, health food, bulk, even, store Thursday.

They have a 48 hour sale on Thursdays and Fridays to draw people in.

While I was there, I spied flank steaks and paid $11.99 for a 1.5 lb piece.

That's right $7.99/lb. I never pay that much for meat but the memory was strong. (and I'll get 4 meals from it at least.)  I had been to another store Monday where they have butchers but they had no flank steak.

      Tuesday I began looking for spiced apples.

Nothing Honey, nothing local anyway.

So I began looking for a recipe to make them.

AHA

      I realized I had 18 boxes of red hots in a sealed container so I made them yesterday.

      I put all of the red hots in a microwave rice cooker type container and covered them with water. I Nuked them at 50% for 20 minutes. (That slows the boil so it doesn't boil over)

      I sliced 4 granny Smith apples and submerged them in the red hot syrup.

Then I put them in the microwave to soften the apples at 50% for likely too long.

I did take them out to check them and they needed a little more time but I probably could have just let them sit in their own heat and finish. I put them in a quart canning jar while they were at their hottest and sealed the lid a short time later.

I bought a box of the instant stuffing yesterday morning.

The meat had pretty much been well trimmed.

I layed it on a work board and pounded it each site to break down the muscle strands, seasoned both sides with seasoning salt and pepper, then scored one side in a cris-cross pattern.

I made the stuffing and spread it on the meat.

I rolled it up. (you are supposed to tie it with butchers string but I didn't have any.)

and baked it at 350 for 30 minutes.

Memories drive us.

This was something one of my roommates in college brought to the table.

I had 4 roommates and that meant we each traded for the couch every 5 months.

We were each spending $150 a month for food and had a meeting where we decided to plan our meals together, shop together and share family recipes together. Can you imagine how much fun we had? Each of us saved 30-40%  shopping as a group and taking turns cooking and, we learned how to cook.

Is it any wonder that we have to unlearn memories of smoking

by making new ones without smoking to replace them?

Wow Dale you made ME EXtremely hungry for a big juicy steak boy oh boy that looks absolutely scrumptious and that's a fantastic Analogy to our quits and if we had a helpful button because I'd be tapping on it right now but I'll have to settle for the like button instead......

You have to realize, I haven't eaten for 12 hours by 3am. Also, I have the most energy of the day when I wake up.

It looks great, and when not at work, hubby eats leftovers for breakfast.  I don't wake up at 3am  to make it fresh, but he does mind.  It is why I can almost never cook for 2 days, because the leftovers are gone by the time the rest of us are getting up

Looks good! This might be a silly question but when you say Red Hots, do you mean the candy red hots?

Yes. that even looks like the size boxes I had. I bought a case of 24 a few years ago and they were in the boxes in a sealed container. They worked perfectly to flavor the apples and I added nothing but the water to cover.
