Jackie's Simple Chicken Salad

This recipe is enough for 10 ea per 1/2 cup servings. 

I make this at least once a week for someone special.

     Combine

  • 12 12oz-15 oz grilled chicken breast fillet(s), (about 2 large breast) cubed00 Points00 P
    12cup(s) coarsely chopped celery
    6- 8TbspMiracle Whip Light dressing more if you prefer
    Seasonings to your taste
    1tsp coarse black pepper
    1 tsp of sea salt
    1Tbspapple cider vinegar (my choice)
    Tbsp fresh lemon juice - secret ingredient. 
    Optional
  • 14cup(s)raisins 
    1/4 cup of walnuts 

Instructions

Gently fold all ingredients

Serve on beds of lettuce, celery stalks or your favorite cracker/bread.

Enjoy 

PS.  I got this recipe from a nice German lady.  I have revamped over the last 30 something years. it is quite versatile. 

If you like cheese add cheese.  If you like peppers use peppers.

I am not surprised you got this from an old German lady, lol. My Nana came over from Germany and this is her recipes exactly except she also used chopped up pineapple in hers. She did use walnuts too, which was one of your options. It is a family favorite recipe

I have used grapes and apples but never pineapples. I will have to try that.

Yum - I do like the pineapple too.  But have never used the apple cider vinegar- will try that next time.

I just dropped off a batch of chicken salad to my special someone. I had to get it out of the house before I ate it all.

They have a really big smile and a big thank you.  Want to make someone happy.  Make Chicken Salad.

This is a great idea. We have our 3 sister in laws staying here with is for the next week and I believe I will make it tomorrow!!! Thank you

Forget the brushing.

Put a stick of butter on the 9 x 13 baking sheet your going to use. Let it melt in your oven for 2 minutes.

Dredge your flour tortillas in it. Flip them. Add the cinnamon and sugar, Flip again and add the cinnamon and sugar on the other side then, bake as directed.

less cleanup

quicker prep time

you can lick the pan (after it cools)
