Somebody asked me for this, and I can't find the reference, so I'm putting it here. These are a PAIN to make - but are melt in your mouth thin and especially good!
2/3 cup butter
1 1/4 cup sugar
2 eggs
3 cups flour
2 teas. baking powder
1 TAB fresh orange juice and zest from one orange
Colored sugars
Preheat oven to 350. Sift four, salt and baking powder together - set aside. Cream shortening, sugar and eggs..Add flour 1/4 cup at a time. The dough will be VERY thick. Add OJ and rind. Refrigerate for at least an hour (I do it overnight) and keep the dough you are not rolling out in the 'frig until ready to use. Roll VERY, VERY thin (so you can see through the dough). Use lots of flour on rolling surface and roller (I dust the finished cookies with a paintbrush just for this purpose if they get flour coated!) I use Tupperware rolling pin that you can fill with ice cubes and water to keep it cold). Cut them out with cutters. Warmth is the enemy when rolling these out. Sprinkle with colored sugars. Use greased cookie sheets. The cooking time will vary depending on how thin you make them - but you have to watch them because they are done - then burned. I have been making them for 40 years and STILL burn a tray. One tray should have just one kind of cut -out so they all bake at the same rate.
